A Lao Inspired Camp Meal

Camp Cook Guides are one of my absolute favorite blogs to create for The Landmark Project. Once a month or so my team and I will create a recipe, pack up some ingredients, and head outside to cook together. We will take photos, shoot video content, and of course — eat.

In the Spring of 2021, I married my high school sweetheart. He has been raised on some of the most amazing Laotian food that has yet to compare to any restaurant we’ve ever been to. A staple within these dishes is sticky rice (which I promised to learn how to cook in my marriage vows, true story) and has accompanied many dishes within our home together.

As my team and I were brainstorming the upcoming blog, I think my cravings took over and I curated an elaborate Lao inspired meal. We made a vegan friendly tofu fried rice, vegetable dumplings, spicy Lao sausages, and lots of sticky rice.

This food to me what home tastes like. I would crave it during my years away at college and was always grateful for the steaming bamboo basket of rice that would greet my nose before my tastebuds while visiting my soon-to-be family. I am grateful to be able to honor them and all the love they put into their food, while being able to share that with you.

My hope is that whether you are intimidated by this kind of cooking, or are eager to try something new, that this blog will inspire a meal that is shared with people you love.
